Skinny Spinach Lasagna Rolls

Skinny Spinach Lasagna Rolls

This has been one of my fave go-to recipes forEVER! It's super easy and fast if you use a good quality jarred sauce but sometimes I make my own sauce from scratch, just depends on how much time you have! 



Ingredients: 
  • 9 lasagna noodles, cooked 
  • 15 oz frozen chopped spinach, thawed and completely drained
  • 15 oz fat free ricotta cheese 
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • salt and pepper
  • 1 jar of marinara sauce 
  • 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded


Directions: 
    Preheat oven to 350°. 
    Combine spinach, ricotta, Parmesan, egg, salt and pepper in a bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.
    Lay out lasagna noodles and make sure the noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
    Ladle sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.
    To serve, ladle a little sauce on the plate and top with lasagna roll.

    Sull La Vie

    OMG.

    How long have I been talking about bringing my blog back? Everyone keeps asking and I say that I'm working on it which is pretty much the equivalent to your friends asking you if you are on your way and you say "Yeah! I'm leaving my house now!" when you are actually just getting out of the shower.

    I have picked it up here and there and toyed with it and ultimately decided I wasn't vibing with my old blog anymore and it was time to break up.

    Soooo...enter my new blog!

    It took me forever to come up with a name...like FOREVER. I'm a mom to a 13 yr old daughter (teenagers SUCK) with Dyslexia, a 9 year old son with ADHD, and a toddler with more sass than even I know what to do with and I find myself in these crazy situations on a daily basis where I'm like WTF?! Since I have a toddler I have been TRYING (key word: trying) to stop screaming WTF every time shit hits the fan so lately I've been saying "C'est la vie"! If you don't know what that means, it's French for "That's life"! Much more toddler friendly...at least until I perfect cursing in French.

    Anyway with my whole crew of Sullivan kids over here (my poor other half Loren is outnumbered, all of the kids took my last name so he is the Lone Lauver) we are pretty much Sulli everything so Sull La Vie just kind of clicked!

    This blog will be all kids, food, travel, fashion, beauty, lifestyle, or whatever strikes me as interesting that day and I hope you follow or subscribe or whatever it is that you do on here!

    Oh and always feel free to comment with questions, feedback, or topics you'd like for me to blog about!!
